"Inside the Fairmont Olympic Hotel at 411 University Street I learned about a new full-service restaurant called The George, part of a $25 million renovation of the hotel's bar and restaurant areas; chef Thomas Cullen, formerly an executive chef for Ethan Stowell Restaurants, is aiming to make it the “top restaurant” in Seattle and will serve ambitious dishes such as huge seafood boils, dry-aged Carman Ranch steaks, sashimi, and grilled octopus, using almost entirely ingredients from local farms, ranches, and fisheries, and the space—with vaulted ceilings and granite tile floors—is stunning, with plans to eventually serve breakfast, lunch, and dinner." - Jade Yamazaki Stewart
