"Opening Nov. 5 in a 2,400-square-foot corner space at Rainsprings Plaza, this new ramen bar brings the brand’s signature slow-simmered tonkotsu-style broth to southwest Las Vegas and will sit alongside a Starbucks and a Panera with a drive-thru. The pork-based stock is simmered for more than 10 hours using Fuji water, and diners can customize bowls with up to 25 toppings — including pork chashu, mushrooms, kikurage, and soft-boiled eggs — with choices of pork, chicken, or vegetarian broth and even spinach noodles. Beyond ramen, the menu offers Japanese-style tapas (spicy creamy shrimp tempura, pork gyoza, salmon cilantro sashimi), small plates like a crispy kale lollipop, Brussels sprouts tempura and crispy chicken, rice bowls and curries such as beef sukiyaki and Tokyo curry rice, plus inventive mini tacos in wonton shells (spicy tuna, salmon poke, pork chashu with kimchee). Founded by Tomonori Takahashi in 2010 and expanded locally after a 2014 Las Vegas debut on Flamingo Road, the concept now has a presence across North America and is planning another local outpost in Boca Park." - Susan Stapleton
