"For Peruvian food in Culver City, look no further than Ceviche Stop. After years of praise from the late Jonathan Gold and time spent cooking in the front of his uncle’s bakery Lonzo’s, Walther Adrianzen finally has his own fast-casual Peruvian-fusion spot in the former Gaby’s at the corner of La Cienega and Washington. With an open kitchen, seating for about 30 inside plus sidewalk seating and a small patio, he’s offering a pared-down menu of raw seafood staples—oysters with shiso leaf and passion fruit, split and seasoned South American shrimp, fresh blood clams from Mexico—and a hot-food section with grilled cow’s heart anticuchos, rotisserie chicken, and lomo saltado as quick, inexpensive lunch or dinner options. Expect classic ceviche and new-school interpretations like lobster nachos, the hangover ceviche served with tiger’s milk and calamari, and pescado frito with a whole fried red snapper, and find Adrianzen working alongside his wife and partner as he rolls out a Chipotle-style model; the restaurant opens in early September and serves lunch through dinner." - Farley Elliott
