Rather than molting its shell with ease and growing a new one as the seasons change, the crustacean swells and swells inside the same shell until the discomfort becomes too great — its shell pops off. Only then is the lobster able to really expand. “This is the Xocolate Bar,” Lopez-Maggi says. “We are the lobster. Compared to 10 years ago, we’re doing seven or eight times the volume.
