How the Grand Canyon Restaurants and Railways Reduce Waste

"The sole lodging located below the canyon rim, reachable only by trail and historically serviced by pack mules that carry guests and supplies. The ranch depends on around 150 canyon mules for transport and benefits from park food-waste programs—kitchen scraps such as shriveled apples, melon rinds and carrot shavings are veterinarian-approved and reserved for mule meals—helping divert food waste from landfills and support animal nutrition." - Emily Hochberg
