"Founded by José Moreno and now run with his brother Jesús and longtime colleague Angel Ruiz, this operation grew from a popular fleet of birria taco trucks into a permanent stall in the Tangram mall food court (second floor), offering indoor seating where truck customers once ate standing up. The expanded menu adds chicken and carne asada, a flour-tortilla birria option inspired by northern Mexico, vegetarian potato and mushroom tacos, sopes, and — for the first time — a skinny, hand-held burrito made with tortillas from Tortilleria Nixtamal that emphasizes whole beans, minimal fillings, and foil wrapping for easy, utensil-free eating. Recipes have been rigorously tested (including a simple chorizo of pork shoulder, guajillo peppers, vinegar, and salt) and were refined by feeding staff and friends, building on the vendor’s reputation for Tijuana-style birria tacos and a multi-borough following of food-truck devotees." - Luke Fortney
