The newest Italian restaurant at Bellagio executes the formula so well, that you can’t help but get swept away in the high-roller fantasy (at high-roller prices). If you’re a Carbone newbie, don’t resist the classics—caesar salad prepared tableside and spicy rigatoni vodka—and if you’re not, you already know they live up to the hype. For the full Riviera experience, sit on the patio and order the tuna calabrese in olive oil, the massive, two-pound lobster fettuccine, and a whole fish like a silky dover sole.
