"The chicken parm at Fioretta in Fulton Market is pounded super thin. So thin, in fact, that it’s sliced with a pizza cutter at the table. But despite being flattened like a cartoon character, it somehow stays juicy. The breast is coated in a very light breading and comes with a reasonable amount of a slightly spicy tomato sauce, tempered by dollops of creamy robiola.
