You can choose your own steak from the case of glistening, dry-aged selections or simply tell the hipster-bearded butcher how much you’d like to spend and let him follow his whims. Either way, you’ll get a butcher board topped with griddled steak that’s been sliced for ease of sharing. The beef is paired with an ever-changing sauce that’s typically far herbier and zingier than anything the French ever invented. And that’s not the only thing they’re tweaking from more time-tested Parisian steak models.
