At this KBBQ place from the folks behind Mari and Kochi, they only serve dry-aged pork, and you’ll hear it crackling on grills throughout the narrow, heavily branded room as soon as you walk in. Choose from cuts like belly, collar, and bone-in loin, or get a $80 butcher plate that comes with all three, plus some jowl that crisps up nicely. You’ll get free banchan with your BBQ, and you can round out your meal with kimchi fried rice that’s 50% Spam, and pork soup with broth so rich that it sticks to the inside of your mouth.
