"Yes, Muka overlooks the Urumea river and the city’s beautiful Belle Epoque architecture—but more importantly, it has our favorite seasonal menu and wine list. The two chefs who run the place came from top kitchens like Mugaritz and are olive oil producers and natural wine fanatics. Their menu reflects their produce-worshiping bona fides. The grill threads through the menu, kissing baby leeks and octopus with smoky flavor. Expect a less-is-more approach in the form of deceptively simple dishes like anchovies in an emulsified lemon garum or paper-thin crystal peppers." - Marti Buckley
