"The 19th-century dining room at Bouillon Chartier is flat-out impressive, thanks to the golden hat racks floating above the banquettes and quicker-than-light servers scribbling orders on the paper tablecloths. Here you can get a perfectly fine three-course meal for €10—just about enough to make up for the interminable lines and service that borders on downright unpleasant. If you do wind up at Chartier, here’s the plan: Join the queue no later than 6:30pm, and say oui to the €1 sangria or vin chaud during your half-hour wait. Once you’re inside, order the garlicky snails and pot au feu, a stewed beef dish that’s been on the menu longer than Paris has had a métro, before finishing with the house special profiterole coated in sticky chocolate sauce." - Emily Monaco
