"At 5pm, the lights come on and the rotisserie starts whirring at Tacos El Gallito. This taco trailer at Barton Springs and Lamar is open nightly until 4am, and its specialty is al pastor. There’s a trompo out front—right next to a few speakers blasting music that makes the crowded parking lot feel like a party—and a self-serve bar of salsas and limes, ensuring you can make your tacos exactly as spicy as you’d like.
