"This Nobu Matsuhisa restaurant in a mining-era Victorian home is an Aspen institution. The cavernous lower level is home to the main dining room, which welcomes a mix of billionaires with black cards, ski bums with trust funds, and celebrities with entourages alongside regular folks straight off the slopes. Find Nobu favorites here served family-style, like rock shrimp tempura, yellowtail jalapeño, and black cod miso, plus a list of specials from the fresh fish flown in daily. Nobu remains one of the toughest reservations to get in town, although you can always try your luck at the upstairs sushi bar and lounge, which is an easier table to get and takes walk-ins." - Katie Shapiro
