Take one bite and you’ll realize that each springy circle is actually a marvel of yeasty dough construction—with that chewy-yet-light, bouncy, small-batch quality that’s elusive enough in regular donuts, let alone vegan ones like these. The glazes are generous but not excessive, and sweet, but not tooth-achingly so.
