It opts for whole, long, crunchy romaine leaves that are lightly but excellently dressed, with a pleasing hit of citrus going on. Controversially, and brilliantly, this caesar isn’t dressed with parmesan, but with Doddington cheese, a nutty British parmesan interpretation from Northumberland.
