Diners drop sliced meats and vegetables into cauldrons that bubble with Chongqing-style spicy-and-numbing soup and milder bone broth, but the sauce bar might be the real attraction. It has nearly every condiment imaginable, as well as a buffet of sweet and savory snacks like rice crackers and a coconut pudding that slaps. All in unlimited amounts.
