"Soba Kamakura is one of the rare places in the country that makes soba noodles entirely by hand. There are only nine seats in this spot in Mandaue, five of which are at the bar, where you can see the chef quietly mixing, rolling, and cutting them behind the counter. The result is a springy, nutty noodle served with a light and clean dipping sauce, served in gozen-style set meals that come with things like crispy tempura, glazed eel served on a bed of rice, and chawan-mushi. There’s even a vegan gozen, and the $23 lunch special is surprisingly generous. The staff hover a little (for example, they might approach if you used a seasoning on a dish it isn’t intended for), but a bit of gentle supervision does feel like a fair trade for a meal that’s this precise and satisfying." - Chandra Joshua
