"We want to be a Hokkaido cow in our next life. They have it pretty good, or so we imagine after sampling their goods at Indigo Cow in Echo Park. This soft-serve shop from Seattle sources its dairy directly from Japan, which might sound like a gimmick until you try their signature milk flavor. It’s incredibly light and silky with a subtle sweetness that needs zero embellishment. If plain frozen milk doesn’t sound like your thing, there’s also a not-too-sweet matcha flavor (and a milk-matcha swirl), toppings like mochi and nutty roasted soybean powder, and the option to cap your cup with creamy Japanese sweet potato puree that’s brûléed to order.
