"If you’ve driven down East MLK at any point in the last month, you may have noticed a converted school bus painted like the Puerto Rican flag parked outside of a seemingly-abandoned gas station. Turn around and park the car, because this new food truck is making some of our favorite Puerto Rican food in town. The menu changes a bit from day to day, but some of the staples you can expect to find are roast piglet, rice with pigeons, mofongo, and tostones. And every Sunday, they roast a whole pig, so plan accordingly. We usually get a plate of whatever they recommend for the day. In our case that was slow-roasted pork, rice with peas, and yuca with pickled red onions. And we’re already planning our next visit." - Nicolai McCrary
