The menu is a hybrid of Roman, Umbrian, and southern Italian cuisine, and the pasta reflects this mix—the cacio e pepe comes dusted with truffle, the ravioli is stuffed with burrata, and there’s carbonara with fava beans, artichokes, and peas.
