"This iconic restaurant, just behind the historic Casino de Huesca, has taken a new direction, although it retains its culinary essence and continues to be known as the ‘Casa de la Trufa' (Truffle House). The establishment, with a carefully designed contemporary aesthetic, has an exclusive reserved area dedicated to truffles (for 10 diners) and the gastronomic restaurant as such, with a semi-visible kitchen and on one of its walls, created using Artificial Intelligence, a large illustration of a woman singing opera (hence the name Lillas Pastia, from the tavern depicted in the famous opera Carmen). Chef Carmelo Bosque offers us, through both the à la carte service and his set menus, an updated traditional cuisine based on market products. The most outstanding dish?
