"‘Betong’ translates as ‘concrete’ in English, which explains the bare walls at this buzzy, simply decorated restaurant. Dishes like the Chef's signature ‘Cold Curry’ (available as an added extra to the tasting menu) showcase his creative heart, but the kitchen's classical technique shines through in highlight dishes like butter-poached skrei cod with pak choi.
