"‘Regalo’ is Italian for ‘gift’. Chef Tomomi Ogura uses Japanese ingredients such as bamboo shoots, sweetfish and Pacific saury to bring the seasons of Japan to his guests. Combinations of ingredients are to be kept to a minimum; set menus should offer variety . These two principles summarise cucina Ogura, which literally means ‘Ogura’s Kitchen’.
