"We are working to open a new sustainable hotel in Sao Paulo in 2022, about 160 rooms, where our eye for sustainability and Brazilian culture will be everywhere: we will use nature to support us and also support nature, host and feed people, and let them take a shower in a good and environmentally friendly way. Our furniture will be made of recyclable materials by local people, we will use clean energy and water, and waste less energy and less food. D.O.M. will move into the hotel, which will also have five other restaurants focused on Brazilian flavors and culture—four of them very casual, affordable, and friendly—proposing flavors that connect people and questioning why we overvalue animal protein and undervalue vegetables." - Michelin Guide Digital-Hong Kong Macau
