"A place to eat and learn, this restaurant in the busy centre of Maribor doubles as a training ground inside the modern building it shares with Maribor’s Vocational College for Hospitality and Tourism, where students rotate through cooking and service under the guidance of chefs and assistants. The menu teaches a regionally inspired, sustainable approach while chasing surprise and sensory appeal, with upcoming dishes like carrot tartare of multi-coloured carrots with egg and mustard seeds, a light pasta with chickpeas, crème fraîche and chives, mains ranging from mullet fillet with potatoes, chard, parsley and garlic to a roast quail with black cherry that plays with contrasting light and sweet flavours and a distinctly Central European influence. Counted among the city’s best, it seats about 30 with two lunch sittings and one in the evening; as manager Tadej Ljubec notes, the day-to-day presence of the catering school and its staff (two in the kitchen, two front of house) and a shared responsibility for 160 students who take turns working here underpin a broad, culturally embracing menu that might feature edible flowers like nasturtium, potato moussaka, liver pâté and classical Italian desserts such as Gorgonzola with pears.
