Inside, head chef Maximin Hellio, who has worked with Frédéric Anton and who then received a Michelin star in the family-run Voile d’Or in Sables-D’or-les-Pins in Brittany, champions the full bounty of Normandy, including fish and seafood. He showcases these ingredients in refined and creative dishes with honest and precise flavours, accompanied by interesting wine pairings which add an extra dimension.
