"Driven by a simple promise to give our best in every aspect, we built this restaurant on uncompromising food quality—especially fresh seafood. I woke up early every morning to buy the day’s catch at Civitavecchia Market, and a haul of scampi, clams, and mussels once inspired a simple linguine with tomato sauce that guests loved; that Linguine Alla Sabatini became our signature and one of the restaurant’s most famous dishes. We also created Spaghetti Alle Vongole Veraci—spaghetti with fresh clams, garlic, and parsley—and were among the first in Italy to serve pasta with clams. Despite owning the place, we handled everything ourselves from sourcing to kitchen to floor, working very long hours seven days a week without holidays to serve authentic Italian food that locals truly enjoyed. As word spread, tourists arrived alongside the occasional Hollywood star—Alberto Sordi, Sean Connery, and Tom Cruise, who ordered the Linguine Alla Sabatini. The devotion of guests who fell in love with the atmosphere, the ambience, and our food even led to our first overseas outpost in Hong Kong in 1992." - Silvestro Sabatini
