"Inspired by her grandmother’s miso soup and the sight of her making fresh bonito shavings, Mai Nagamatsu is telling the world about the wonders of katsuo-bushi. The chef piles a helping of bonito shavings on rice, conveying the wishes of her food producers. Customers who want seconds can enjoy shaving the bonito themselves.
