"Born from a desire to make fine spirits in the tropics, this family distillery on a Walkamin property produces craft whisky, rum, vodka, gin and liqueurs that emphasize distinctive Australian flavours. Recipes use locally harvested ingredients — honey mash in the vodka, sugarcane syrup in the rum and 14 homegrown botanicals (including lilly pilly/riberry and finger limes) in the gin — and each bottle is made with pure spring water fed from an ancient subterranean river. Tastings at the cellar door include inventive pours such as the Sexy Cat liqueur (rosewater, vodka, raspberry and liquid marshmallow); visitors can also eat pizza at the adjacent bar and restaurant and meet resident rescue animals like alpacas, donkeys and goats.
