"Set in a sprawling botanic garden, the Art Deco complex at Terra Nostra Garden Hotel is the island’s iconic hot-spring hotel where I watched chef Valter Vieira lead the gathering of ingredients for his specialty, cozido das Furnas. After the geothermal cooking, the tuxedoed maître d' escorted me to a white-clothed table and poured a flinty white wine from Pico, and a waiter arranged every sausage and leaf of cabbage on a gleaming platter before pouring the precious cooking liquid from a Japanese kettle, sending up a cloud of steam.
