The Brindle Room has been around in some form since 2010, and their classic burger looks deceptively simple, like it could be served at any bar in America. There’s no fancy cheese or bespoke bun. Instead, the patty is the focus, and it’s a perfected blend of 30-day dry-aged beef, fresh beef, and suet, which results in a bite that’s savory from the aged meat, yet still dripping with fat. The american cheese, griddled onions, pickles, and basic bun are just a frame for this beefy masterpiece—which also comes with some respectable fries, and costs $22.
The best part is you can easily find a cozy leather booth in this place that looks like a 19th century tavern, complete with paintings and spindly wooden chairs. Or crack open a beer on a sidewalk table. And if you’ve eaten the burger a few too many times, there are other very good options, like the $36 steak frites or the french dip.

Burger
It looks like a stock image of a burger, but a lot of craft goes into the patty, a mix of fresh and dry-aged beef neck, rib, loin, and suet. Everything else is just a solid pedestal to that meat.

Steak Frites
If you’re a regular burger-eater here (and let’s face it, you should be), keep in mind that the $36 steak frites is also worth it. The rose-pink 10-ounce New York strip comes with a big slab of melting porcini butter, and a mountain of salty fries.

French Dip
This french dip sandwich is a little controversial—a few of the people we tried it with were in tears thanks to the horseradish mayo. The rest of our party was thrilled to have their sinuses cleared. If that’s a sensation you enjoy, you’ll be rewarded with juicy roast beef, crusty bread, and jus we’d happily sip as part of our morning routine.
