Gladys is a place I truly trust - I trust the quality, the cleanliness, the ingredients, the service, the flavors, etc. The food always surpasses my expectations and you can tell the chefs and employees take pride in the food and care. There are so many kitchens that are missing this these days, so it’s nice to feel confident that if I eat out I can eat here and not regret it later. Sooo happy they are growing and now are able to expand their menu. Definitely go eat at Gladys!! The Reuben will never let you down.

Normally, Im not a big vegan guy, but the Dr suggested a plant base diet. I have had a hard time finding vegan food that I think is good. This place was delicious! The ingredients are fresh, and the staff is excellent and knowledgeable. It was awesome to see the kitchen and how clean it was. Very caring.

Their new upgraded storefront is a total vibe. So wonderful to have such thoughtful table service. We ordered the two mocktails (the green chartreuse one was unreal - so fresh!!) garlic bread, charred Caesar, flatbread, and gnocchi and all were exceptional, but the garlic bread was the star. Took a slice of the rhubarb cake to go which was so tasty.

I had the absolute pleasure of dining at Glady’s in Edgewater Public Market last night, and I’m still thinking about it! From the moment we walked in, it was clear this place is something special. The attention to detail in every corner — from the ambiance to the plating — was simply next level. The food? Mind-blowing. Every bite was layered, thoughtful, and bursting with flavor. You can tell the team behind Glady’s is passionate about what they do. It’s not just about great food — it’s about creating an experience. What makes it even better? Their commitment to sustainability. Knowing they prioritize eco-conscious practices made the entire evening feel even more meaningful. Can’t recommend it enough. If you’re in the Denver area, do not skip this place. It’s an absolute gem.

(Updated 7/25/25) I have been coming to Gladys for years at their stall on the other side of Edgewater Public Market, but it feels like with the move into the former Meta Burger space (RIP), they have perfected their concept. The seasonally-changing menu provides combinations of flavors you will simply not experience elsewhere in Denver. I'm always blown away any time I try a new dish, often coming away thinking it is my new favorite thing. With the change in spaces, they've doubled the menu size, introducing several new delicious items like the Greg Burger, but after seeing what this team has been doing in terms of presentation in takeout containers for years, it's great to see it all finally come together on ceramic plates. I love how nearly everything on the menu makes a vegetable or legume the centerpiece of a dish rather than using meat substitutes, and that their menu relies so heavily on locally produced Colorado produce. My first time dining in, I had the Potato Croquettes which were creamy and robust in combination with the smoked garlic mousse; the Succotash Flatbread which had a perfectly bold combination of spicy corn, tart lupini beans, and nutty bean spread; and the Strawberry Rhubarb Cake which was served warm and had a subtle fruity sweetness. As always, the staff were extremely friendly and attentive throughout the entire meal. The prices per plate are also very reasonable for the amount and quality of the food being served, but there’s plenty of options on plate sizes and prices depending on your preferences. While I have not tried everything on the current menu, my experiences frequenting Gladys have made it one of the easiest recommendations in the city for a consistently superb meal.

We had the joy of tasting through the bright, delightfully curated menu at Gladys. From the tasty not to mention gorgeous drinks to each plate, every detail matters and brings harmony. The food was delicious, well seasoned, and portioned perfectly. Definitely get the garlic bread, summer squash, and classic burger with fries. We will be back to try the offerings we didn’t have enough room to try this time. So good! I’m thrilled to see elevated vegan food in a welcoming and stunning space. Each person that works there is kind, thoughtful, and takes pride in how they cook, work, talk, and live. You’ll adore this space like we did.

I simply love the new location of Gladys. They are still inside the marketplace but they now have a sit down area that is beautifully decorated and has great ambiance. The food is the best vegan food we have in Denver, everything we have tried is delicious. Our favorites are the Cesar salad, the Reuben and gnocchi and the French dip! The service is phenomenal too!

I can't believe I haven't reviewed yet! I should probably try more of their menu items but every time I go I get the Reuben. It's just so damn delicious to pass up! However, like a year ago J got their fried artichoke things AND a Reuben. That's the only other menu item I've tried which I remember enjoying as well! Service has always been good. They're always friendly. Love the location too! Pretty please don't ever get rid of the Reuben!

While perusing the public market, There's lots of good options, but this one is a must try! They have a rotating all plant-based menu with one staple and that's their Reuben sandwich. The flavors were there!! Love a good a Ruben and it's been a long time for me as I've been vegan for nine years, the sauerkraut, rye bread. you don't always come across to vegan Reuben sandwich. This is the one to try. The other gem we were lucky to try is their strawberry rhubarb vanilla cake! I wasn't sure what to expect but I'm so glad we got it. It was beautiful, decadent, sweet and tangy just like you'd expect from a strawberry rhubarb pie, but moist & creamy with the layer of vanilla cake & the vanilla sauce, pooling on the side. Service was very helpful and friendly as we were torn on what to get . The ambiance in the public market is very casual. Think of it as a fun adult cafeteria.

Visiting from out of town and was taken here by my son and wow. What a lovely experience. Super nice people behind the counter....excellent food and a great comfy atmosphere. We had the Reuben, the gnocchi and a salad. All perfect! Definitely worth a high rating!

I was eating a no meat day so I decided to try Gladys. I wanted something with lots of veggies that wasn't just French fries. Gladys is actually a delicious vegan place that even non vegans can enjoy. I ordered the Reuben and the potato fritters and they were actually pretty delicious. It comes with lots of food so it's big enough to share between two or three. I like that they have a very small menu so you are not overwhelmed with choices. Service is very friendly. If you're a vegan and you're out with friends who aren't, this is a great place because it's located at Edgewater Market so there's something for everyone.

We found Gladys after doing research for vegan restaurants during our vacation in Colorado. Gladys had the best rating of any we found. Walking into restaurant, the first thing you notice is how clean it is. That is always a good sign. I ordered the "Greg" burger. It was one of the best I've had. It was so nice not having to ask a lot of questions about the ingredients, everything is vegan! The staff was very friendly and helpful. I will definitely be eating here again!

Nice space within the Public Market. The rave about their Reuben sandwich was so on point! Amazing how veggies can be prepared so well! I'd recommend the aoli fries to go with it. The gnocchi with seared scallion was just ok. We both agreed a funny sour note at the end. Not my fav but the Reuben is well worth it! A few fancy NA drinks are offered. I picked one with a subtle mint. No room for desserts but the rhubarb cake sounded awesome.

THE MENU HAS CHANGED!!! And YES, Edgewater Public Market is the town Jewel!! And Gladys is very creative with their Vegan menus, PLUS being absolutely CUSTOMER ORIENTED WITH GIGGLES! Plus their service is Impecable!! With Smiles plus superfast!! THIS TIME: I had the Potato Bean "cup" of Soup. WOW, was this the most CREAMEST of soups I have ever had in my life, The taste was full of potato, yet not over done with caramel onion melting in my mouth. Honestly I could have had a Huge Bowl of this soup with a nice piece of bread for a one Large meal of the day. Did I mention SMOOTH CREAMY, MORE CREAMY THAN CREAM! Additionally, although this would bust my tummy with all too much food, came the Squash Fritters, these are delicately crispy with a nice creamy green sauce, which I asked for, The Squash Fritters come with a spicy sauce, which my tummy cannot handle. And what do you think GREAT Chef owners do? They gave me another sauce!!! WOW ~ CUSTOMER HAPPINESS!! This bespeaks to their customer service: NO PROBLEM!! We will give you an alternative dipping sauce and it was delicious. The Squash Fritters are good, why I took 1 star less, I could not detect the "Squash" which is a lovely flavor, just a bit to pump up. The Menu has changed to some scrumptilicious foods, and DO NOT FORGET they make their own Large cookies, They really are delicious. Gladys is an exceptional Kiosk at the Edgewater Public Market, always busy, with happy Chefs busily working to serve each person with a smile and Happy Appetizing Vegan Food, very imaginative, and with a New Menu, it is a must to return. The Most Favorite which did not leave the menu is their Ruben Sandwich, it is HUGE and IMFAMOUS!! Does look delicious and did I mention HUGE!! Great and only Vegan Kiosk with LOADS OF FLAVOR!! Highly Recommended!! ENJOY

I say 3.5 for the food, because the Ratatouille I had today was mostly lacking flavors. Although it was a good mixture of veggies, protein and grains, I felt it wasn't tasty enough, surely not the high reviewers it's getting. Service was good!

This is an amazing vegan/plant-based place recommended by the owner of the Greek restaurant right across from it (I first went there to order their veggie plate. The owner then asked me if I was a vegetarian or vegan. Whereas I tend to order a lot of vegetarian/vegan dishes when I'm out, I do eat meat from time to time so answer to his question it was "No, I am not" but since he insisted that I go check out the vegan/plant-based place, not his restaurant (lol!!) I went here. And I didn't regret a bit!!) However they came up with the recipe of this dish is beyond phenomenal. The main base is the cashew milk as it is creamy. And there is this hint of sourness which I didn't know where it was coming from. But as soon as I read the ingredients I had this "Aha" moment: It's the shallot. Let's not forget about the customer service. The guy who took my order was very pleasant and welcoming. I asked him about the most popular items on the menu and he said the one I had in mind (Tofu) was definitely one of them. He also said that it's very hearty as well. To pick this dish as my very first dish at my very first visit at this restaurant was the right thing to do so I highly recommend that you get this at your first visit. Believe me, it is sooo good. If I go ahead and become frank about the tofu dish though, its portion is a bit small for the price. Also, wild rice (one of the ingredients) was barely there so my request is that the restaurant increases the amount of rice they put in this dish so that it'll be more noticeable. I really liked the succulent decoration on the wall to the right of the restaurant; it truly echoes the theme of the cuisine they offer. I simply cannot wait to go back and try other things on the menu. The next one might be the Reuben sandwich (and this is plant based as well, of course!!) Goodness, this restaurant is definitely ahead of the plant-based cuisine game for sure.

It's so wonderful to have another fully plant-based restaurant in Denver! And this is a really good one! I know that the Reuben is the most popular item on the menu- and it's good. But I really enjoy the other items. Such a creative chef! The menu changes. I had gnocchi there that was wonderful, awhile back. I tend to enjoy the seasonal entrees that are showcasing vegetables as they are, rather than trying to mimic meat.

I love Edgewater Public Market. My go-to food stall here is normally Konjo's because Ethiopian is one of my favorite cuisines of all time but I thought I'd try something new this time. Gladys is a plant-based vegan stall that was an unexpected delight. The food is delicious and so flavorful, and I was impressed by the quality of ingredients they use. It's really great value. Vegan food can sometimes be a bit boring, but Gladys feels more creative and unique. I liked the turnip cassoulet okay but I absolutely adored the chocolate mousse! The mousse here slays and I'll have to come back just for that alone. Parking: huge lot since it's Edgewater Public Market Service: kind and friendly and they helped me pick a dish. Ambiance: a casual eatery with lots of seating and great for coming with groups

The cucumber salad is delicious and loaded with protein which is a challenge with vegan options. It has a spicy kick and lots of crunch. The Reuben is my favorite and those cookies are very hard to resist! So glad they are expanding into a larger space. This place is amazing for fresh, healthy and delicious food! I LOVE GLADYS. Everything is always amazing. Today I had the caesar salad and the corn fritters. Match made in heaven. The savory/salty bits throughout the salad play perfect contrast to the fritters and their peach-calabrian chili dipper. The root vegetable reuben is so good too. Just try it. You won't believe it's vegan. The staff is always super helpful and friendly. I wish they lived in my kitchen.

The hubs and I love coming to the edgewater market. Tonight I decided to try a new spot for dinner. The fava bean croquettes looked delish and I was not wrong. The staff was all really friendly for starters. Then I got my dish and I could not have been happier. The croquettes were light and crispy. The salad was perfectly dressed and the tart lemon cut through the fried croquettes perfectly. I also got a salaried chocolate chip cookie for dessert which was rich and packed full of chocolate. Really solid meal overall.

Gladys has been on my list for a while, and when the opportunity to eat here popped up, I jumped at it. I had the "seafood" pasta, which was mostly drowned in oil with a handful of veggies thrown into a plate of pasta. The flavor was wonderful if you can get past all of the oil in the plate! For the price, I expected a bit more, but the dish was still pretty good. The chocolate chip cookie was delicious and I would recommend that a million times over! Overall, the staff was extremely friendly, the location is great and well set up for service, and I would definitely try the food again.

A vegan restaurant you say?!?! No thank you would be my usual response... But, if you haven't tried vegan food lately you really should and Gladys does it right! You absolutely have to try the Reuben sandwich, made with Celery root instead of pastrami and you absolutely won't know the difference,I promise! Their artichoke heart appetizer is awesome and the charred Caesar salad is fantastic. Give it a shot, you won't be disappointed! The service is always friendly and quick and it's in Edgewater Market which is a really cool food hall itself. Can be a little loud but that's part of the charm and energy of the place! Do it for yourself and tell your friends!

Here is a story of a pescatarian craving her long love of pastrami. AP being a pescatarian had been craving a really good pastrami sandwich for years and would give her one chance of eating meat at Katz Deli in NYC. So one day at Edgewater we came across Gladys. AP was hesitant at the sandwich being made out of celery root which she despises. They gave her a free sample and it changed her mind foreverrrrrrrrrrrr. She immediately ordered their vegan pastrami and it has been her go to order. The texture is close to a typical cold cut and they do an amazing job incorporating flavors of a meaty pastrami really well. The bread is perfectly toasted and if you random person does a blind test between a real pastrami vs their offering, they might be thinking it's meat! Great job by Gladys by offering dishes close to their meaty counterpart. Who needs Bagel and Deli when you have Gladys down at Edgewater!

Gladys excels in crafting flavorful vegan dishes. On this cold winter evening, I enjoyed the Winter Fricassee. It's a delightful combination of roasted tofu, cashew cream sauce, lentils, cipollini onion, and pickled shallots, offering a delicious blend of intrigue and comfort. The employees have always been so generous with their recommendations. They've never steered me astray. Located inside the bustling Edgewater Marketplace, you'll find Gladys nestled in the far left corner of the food venue. If the central tables are occupied, there are little two tops sprinkled throughout the hallways. Be sure to check out some of the other retail venues when you go!

Had the Tofu Piccata $19 for a small portion of overly salted mediocre veggies and tofu. $7 dollars for a soggy chocolate "pie" desert that was just a soggy finger cookie and generic tasting chocolate spread. What a waste.

It does not matter if you are not vegan, because this wonderful establishment will not disappoint. Flavor - check Creativity - check Beautiful presentation - check Delightful service - check Freshly prepared food - check Desserts offered - check It is worth every penny to come here; if you're starved, order two entrees. Try the vegan chocolate chip cookie. Their canned beverages are fabulous. I always have to chuckle when I read reviews that complain about price. How is it that $50 of adult drinks can be justified in one sitting but folks can't seem to muster the $$ to buy top notch quality food prepared with love? You get what you pay for! Gladys is for those that seek a flavor explosion; a memorable, chef-quality food experience.

This place is doing veg food on a really sophisticated level - I got the crispy fried buffalo artichokes and spring sweet pea salad. The artichokes were a little overly zippy in my opinion but still enjoyable. I'd love to try the rest of the menu. This place is a notch above the other spots in edgewater public market

My favorite restaurant in the Denver area and one of my favorites ever. Have been here a few times and everything I tried had unique flavors and was so delicious. Sunchoke and beets are out of this world! Spicy, crispy, and yummy. Mushroom gnocchi was the best Italian dish I've eaten. Gordo pozole was mildly spicy and refreshing. Garden flatbread was great too. Don't miss this gem! Typically, it's difficult to find parking in the Denver area. But this is in a food court that has a large parking lot, so it wasn't difficult to find parking. Pros: Unique, Flavourful, and delicious, Seating inside a food court, Easy to get parking

Nice spot to grab vegan food that is more "comfort-style" and a bit heartier than the typical salad and smoothie vegan fare. The Reuben sandwich was very satisfying and very unique with the celery root as the meat substitute. The cashier forgot to give me my drink so I did have to mention that when I picked up my food order. I also had the dark chocolate and sea salt cookie which was pretty good- very melty and messy to eat! The market seating inside is pretty loud, but there is also outside seating too which is much quieter.

Mushroom risotto was delicious. A nice sized portion delivered shortly after I ordered. The service was pleasant from the counter employee. As this restaurant is located at the Edgewater market - seating is open for all marketplace visitors. My only issue is a service fee for operational costs which is a bogus fee that has been added by many restaurants for cooking and serving the food customers have paid for...

From an avid meat eater - the Root Vegetable Rueben is legitimately better than an actual Rueben! There were about 5 minutes of shock and disbelief after my first bite trying to process that what I just ate was vegan - but this sandwich packs in all the salty crunchy rich flavors of a Rueben sandwich, but without the heavy greasy feeling that leaves you disappointed in your food choices

Never disappoints. I keep going back for the risotto & flat bread. Last time, the charred broccoli was great. Tonight had the artichokes and Reuben. All amazing, great to have a vegan meal that is plant focused and high-end restaurants style and flavors. I like a vegan burger and fries, but so great to have these tasty vegan options.

I opted for the flatbread based on the employees recommendation. I would agree the flavor was delicious for a plant based meal but the bread was odd and tasted like it would have been gluten free. The texture just wasn't on par with typical flatbread. Also, the meal cost $20. Not worth the price.

This place... I love it so much. I'm a picky picky lady when it comes to food. We run a small farm animal sanctuary so not only do I love animals, the planet and plant based foods but we live in the middle of a rural area so I cook/bake constantly. This place blows my mind with the tastiest food that is plant based. This isn't an impossible burger thrown together. This place makes things I couldn't fathom how to make at home with healthy plants, like that Reuben! Only down side is it is so far from our home in southern Colorado!

I was very pleasantly surprised eating here! The quality is way beyond typical food court/hall food. The flavors were spectacular. My only slight "complaint" is that the wooden fork/knife was no match for the toast I ordered so it ended up being a messy eat. I will 100% be back.

Randomly stumbled upon Gladys and can't believe how amazing it was! We tried their classic dish, the root vegetable reuben, which was crazy good! So flavorful, fresh, and tastes better than a reuben sandwich with meat by far. We also tried a more seasonal dish, the winter fricasse, which was incredible! The cashew cream sauce was so good and the whole dish was so unique overall but a perfect blend. 10/10 overall and will definitely be back to try more!

The root vegetable Reuben sandwich was delicious! So unique and if you served it to me without telling me it was vegetables, I totally would have thought it was meat. It was that good. The fine gentleman who took my order was super friendly and enthusiastic. I love hanging out at Edgewater Public Market. We took our food to the brewery and had a great time.

We literally gasped when we opened up the 2 dishes we got. Put these on ceramic plates on a white tablecloth and I'd happily pay twice the price for what is clearly gourmet veggie-forward dining. ++ Cauliflower bisque: hearty, flavorful, creamy, with toppings that added additional texture and intrigue. ++ Reuben sandwich. Wow. This is the most ambitious vegan reuben I've ever had (I've had 2 others in various parts of the US). They shaved celery root super fine and colored and marinated it in a way that made it look and feel like pastrami+sauerkraut. Brilliant. They don't skimp on the heaviness and greasy spooniness of its namesake (think: buttery crispy toast), either. + At a price point that is reasonable for the value. ~ Can take a while to come out, so plan accordingly if you're in a rush!

Do you too dream of handsome dudes cooking you incredible vegan food? Then head on down to Edgewater Public Market where the boys o' Gladys will make those dreams come true! But in earnest: the flavors are bold, presentation is elevated, and the food never disappoints! I've been visiting these gents since they opened and appreciate their dedication to serving satisfying, seasonal, creative dishes, with wholly plant-based ingredients (vs highly processed mock meats and cheeses). Thanks for nourishing me always, yuh dang dreamboats.

I've been here twice now. The first time I was just there for a lunch meeting and I grabbed a Caesar salad . I went back last week and tired the Ruben and the cucumber salad. The cucumber salad and Caesar were very fresh and had good flavor. The Ruben was made with root veggies and was probably one of the best Rubens I have ever had. I would definitely get it again. The other people I went with recommended I try the chocolate chip cookies . So glad I went back and got one before they closed. It was big with big chunks of chocolate but the best part was the flaky sea salt. Just the right amount of salty and sweet.

I have no idea how this place has only 8 reviews. It only takes one bite of the reuben to know the kind of rare talent you're dealing with at this place. This is fine dining at food truck prices, for vegans. These guys are going places, so take the opportunity while it lasts to get made to order food directly from the chefs themselves. They're going to be running a bigger kitchen sooner rather than later.
