"You don’t have to eat meat to enjoy a reuben, as long as you go to Gladys inside Edgewater Public Market to eat it. The food stall’s version features root vegetables, seasoned and sliced to mimic the flavor and texture of pastrami and stuffed inside toasted marble rye with pickled kraut and horseradish creme fraiche. Other vegan dishes are just as comforting. When we’re not getting the reuben, we usually go for mushroom risotto made with cashew cream and miso parmesan and chickpea tofu smothered in hatch chili gravy.
