Coastal Italian cuisine with Scarpetta-inspired pastas and seafood

"Starting this season, the historic inn is being run by LDV, of Scarpetta fame, so it’s no surprise that pastas shine. Spaghetti comes with fried zucchini and provolone; cacio e peppe is enhanced with sage and charred leek; squid ink linguini is entwined with crabmeat, uni, chili and lemon; and cavatelli is presented with lamb and artichokes. There are several entrees meant for two, including branzino and steak Florentine." - Beth Landman

"“The decor, courtesy of Unionworks designer Poonam Khanna, was largely inspired by the natural Hamptons landscape: earthy hues of sand, green, blue, and peach. The guest rooms are marked by plush beds made with Frette Linens and clawfoot tubs in the bathroom; cottages boast quaint living areas and private gardens. Tata Harper skincare fills the gift shop, alongside a selection of Giulivia Heritage pieces,” Vogue editor Leah Faye Cooper wrote in her first hand account of staying at The Maidstone, which last summer, was glamorously revamped by LDV Hospitality group. Plus, its in-town location means guests are walkable to the town’s famous restaurants and shops." - Elise Taylor

"I was surprised when a weekend stay here made me think: I would go back there. Built in 1804 and originally used as a tannery and lodge, this white‑shingled boutique hotel has been an East Hampton institution for over 150 years on Main Street, and after Jenny Ljungberg’s 2008 Scandinavian makeover (complete with clogs in each guest room) it has been reimagined again by Irwin Simon and Mayank Dwivedi of ISMD with LDV Hospitality’s John Meadow, who aim to preserve its history while infusing la dolce vita. The idyllic property spans a main house with 16 guest rooms, grassy front and back lawns, three cottage suites, and a gift shop; Unionworks designer Poonam Khanna drew on the natural Hamptons landscape for earthy hues of sand, green, blue, and peach. Guest rooms feature plush beds made with Frette linens and clawfoot tubs, while the cottages add quaint living areas and private gardens, and the shop stocks Tata Harper skincare alongside Giulivia Heritage pieces. The overall feel is elevated but unfussy, with a bar and lounge and a Scarpetta‑inspired restaurant that make the place feel like a warm, connective dinner party." - Leah Faye Cooper
"When people think of the Hamptons, they either think of palatial summer homes or historic hotels like the Maidstone. The boutique hotel is reopening this summer with the help of the team who brought American Cut to NYC, and everything from the rooms to the restaurant has been updated to make eating here feel like a trip to the Amalfi Coast. The food here sticks to the fancy Italian summer cottage theming, featuring lots of seafood and cocktails. They even have what they’re calling an apertivio hour in the garden." - anne cruz

"John Meadow has taken over the sweet, historic hotel that sits across from East Hampton’s pond, and starting mid-June, he is bringing to its restaurant, La Dolce Vita, an Italian concept, similar to his Scarpetta Beach at Gurney’s. Chef Jorge Espinoza, who oversees all of LDV’s restaurants, also run this spot, turning out primarily coastal offerings, including spaghetti alla Nerano with fried zucchini and provolone; and squid Ink linguine with crabmeat, uni, Calabrian chile, and lemon." - Beth Landman
