Marrow Co-Founder Sarah Welch Is Leaving Detroit for Traverse City | Eater Detroit

"A forthcoming transformation of a 14,000-square-foot former poultry building at 2442 Riopelle Street purchased in 2021, slated to open in the fall as a combined restaurant and bar with patio seating, an on-site butcher shop, and a USDA-inspected meat processing facility. The site is being positioned as a production and retail hub to “show how the sausage is made,” enable greater in-house processing, and support long-term growth of the local ethically sourced meat supply chain." - Serena Maria Daniels

Marrow’s New Birmingham Shop Is Opening in December, 2024 | Eater Detroit

"In December the company is unveiling its second neighborhood butcher shop in a 1,400-square-foot space at 283 Hamilton Row in Birmingham. The shop includes a retail butcher counter selling aged steaks, deli meats, a selection of wine and gourmet sundries, the shop's line of packaged sausages, limited café seating, and a breakfast and lunch menu of hot sandwiches like meatball subs, banh mi-style veggie sandwiches, a seasonal selection of salads, soups, and other savory snacks designed by executive chef and partner Sarah Welch. In a news release issued Thursday, November 7, CEO and founder Ping Ho said that her team has been popping up at the Birmingham Farmer’s Market each Sunday and added: "We aim to be a neighborhood staple where people can enjoy a delicious meal and conveniently shop for high-quality, locally sourced meats, with the same quality of our flagship Detroit location." Coinciding with the opening, customers can pick up take-home Thanksgiving orders at both this Birmingham location and the original West Village spot on November 26 and 27; customers can place online orders for locally-raised organic turkey, glazed ham, standing rib roast, Sabbath Farm Beijing duck, plus all the fixings and sides." - Serena Maria Daniels

Marrow Is Opening a second location in Birmingham | Eater Detroit

"I learned that Marrow Detroit Provisions will occupy a 1,400-square-foot space at 283 Hamilton Row in Birmingham as a neighborhood butcher shop with limited café seating; it will sell fresh cuts of meat, aged steaks, the company’s line of sausages, and gourmet sundries, and will offer a menu of sandwiches, salads, and soups designed by Marrow’s executive chef and partner Sarah Welch and the rest of the team. The decision to open a permanent outlet was inspired by strong reception at the Birmingham Farmer’s Market, founder Ping Ho said, and the location is expected to open this spring after a brief construction period." - Serena Maria Daniels

Stopped for lunch, the burger is always a favorite but I tried the smoked turkey sandwich today and it was delicious!!! Also grabbed a couple of steaks for the grill. Oh and those fries 🔥🔥🔥

Google
The little brother of Marrow packs a punch! The smash burger and fries fried to a crisp in tallow as well as lotsa meat-to-go options. A lovely spot for a brunch.

Google
A little disappointed. Read all the hype about the burger. It was greasy, tasted like bacon, and was just overall.. ok. Not bad. But not great at all, nor worth returning for, much less $20 bucks. Much better burgers in town. No disrespect. The lack of additional sides, and just a smattering of random items in the store kinda made it an odd experience. Like it wasnt sure what it was trying to be.

Had an amazing lunch at Marrow! I ordered the Reuben sandwich and my friend ordered the salad with steak tips. Both meals were amazing, it was their second day open and the staff were absolutely on top of it. The food was delicious, it’s the best Reuben I’ve ever had. I can’t wait to go back and try the smash burger and the breakfast sandwich! They have a pretty large selection of meats at the butcher counter and pre-packaged foods available as well. I grabbed some farm fresh eggs, dog bones, and wine on my way out the door. The wine selection is really great with a good range of pricing, and they order it from full body to lighter so it’s easier to make a selection. I highly recommend this spot for lunch and/or to grab groceries, meat, wine, etc after work! Looking forward to being a regular!

Google
The menu is simple, but everything is delicious and it’s clear the menu choices are intentional. The selection of drinks and sundries is very thoughtfully curated and boutique without being overpriced. And of course the commitment to working with local farmers who focus on sustainable, humane farming is apparent in the incredible quality of the cuts of beef and pork (which are also VERY reasonably priced). HIGHLY recommend as both a local butcher shop and a lunch spot!

Google
Easily one of the best burgers I have ever had. The flavor, the quality, the way everything came together… unreal. I did a TikTok review and it actually went viral because that is how good it was with many others chiming into to agree. This place deserves all the hype. If you are thinking about trying it, do not walk — run.

Got a reuben and tallow fries. They were both excellent! Service was great. I also got a brisket from the butcher shop while I was there. It was extremely well trimmed and ended up being one of the best pieces of meat I have ever smoked. Would absolutely recommend!

Google
You don’t need toppings when the meat’s that good. The beef tallow fries were crispy, rich, and full of flavor. You can tell they use real, quality ingredients! They even sell clean snacks like chips, marshmallows, and nuts everything tastes well-made.

Yelp
I am a big fan and regular patron of the Marrow location on Kercheval and was extremely excited to see them open the Birmingham location. Excited to have another pasture raised butcher shop in the area. Had the Smoked Ham sandwich that had a great mix of flavors. The Smashed Burger was also very tasty. The staff is very friendly and welcoming. All the meats cuts look good with great marbling. Looking forward to grabbing some next weekend! Good luck on your new location!

Yelp
Pretty exciting to see Marrow in the burbs! Though not in its full glory, it's still titillating to see them slang their infamous smash burgers and plenty of intriguing creations in their more casual vibe new digs. Gotta, gotta, gotta have their double smash burger, no questions asked. Fantastically melt in your mouth, though the seasoned griddles over at the OG Marrow in the West Village definitely leave a tastier imprint on their delectable custom blend of beef. Cant wait to try some new new next time!

Yelp
Ordered the breakfast sandwich and it is worth the hype!! The sandwich is $10 and is $4 to add sausage. Not totally clear from the picture but it was a gigantic piece of sausage. I would not think to include pimento cheese on a breakfast sandwich but it's a perfect match. They also have a cute little bar seating area at the front and some tables in the back if you want to eat there!
