Saint Florian

Well I rarely rate a place this low. For starters I came at 4:30ish on a cold windy day and there was no soup until 5pm so for 30 minutes the customer couldn’t be pleased. I felt in comparison to other places like the 4k restaurants that I have made reviews of on my social media it was not a fair priced “portion to price ratio”. Chicken and fries are under 10 bucks for most kids meals 15 the max. The Diet Coke was flat and when I told my waiter he tried to fix it at least but, I chose not to continue because at this point my experience was going down hill. Sometimes you’re better going to a small hole in the wall and the food is better. As for the rest of the meal no bread and butter while you wait for your food. The waiter pushed a glass of wine when explained if no specific red was available then a soda would be ok. But people make mistakes sometimes so It’s ok. Honestly as 36 year veteran cooking and owning a restaurant I know what is fair and what customers want. I could contribute more about my experience or post a video but I don’t see the further need to explain that this is one of those places where you don’t want to go. Every dish was a solid hit. NY strip steak was cooked perfectly to medium rare. I could tell that the steak was very quality from the delicious juicy fat. Every bite of the caesar salad was a perfect bite of textures and flavor. I personally loved how the waiter was very patient and informative about the food. Def worth the visit!!

Long story: Nestled on Warren Street in the sleepy town of Hudson, NY is Saint Florian. While Hudson has a vibrant foodie scene it did not have the special mix of what Saint Florian is serving (both literally and metaphorically!). When entering the historic former fire house we were warmly greeted by staff. The bottom floor is rich with wood, a large bar and tables for more casual dining. Up a beautiful wooden staircase to the second floor you’ll find another sizable, zinc topped bar and cozy seating. The decor is comfortable and playful, including many little nods to the building’s fire house history. The menu changes seasonally and specials are offered nightly. The menu is protein centric without being a stereotypical steak house. It offers something for everyone, literally. Vegetarian, vegan and gluten free foodies will all be satisfied with offerings, here! As a long time vegetarian I am often left with salads as a main course or need to modify menu items to suit my diet. Saint Florian was a welcome reprieve with a variety of choices for me. The menu does not overlook the vegetarian or vegan diner. More than not overlooking us, Saint Florian is catering to us! Our table shared the mushroom croquettes appetizer special along with the fried mushrooms and steak tips. The other diners with me reported that the steak tips had excellent flavor and texture. The mushroom croquettes made from locally foraged mushrooms was certainly a highlight- even to the omnivores at the table! The fried mushrooms were crisp and the horseradish sauce to dip them in was stellar. Each dish is elevated using lesser know/unique ingredients to level them up. For example black garlic was used in the steak tips and nutritional yeast was used in a buttermilk sauce that the mushroom croquettes were placed atop. Main courses we ordered included the fish and chips (fried cod and French fries) which were not only a large portion but were reportedly delicious. The main vegetarian item was a roasted cabbage. It was crave worthy! The quartered roasted cabbage sat on a puree that added sweetness and depth to the roasted quality of the cabbage. Chopped nuts played well with the warm roasted vibe while the fresh dill brightened the dish. For dessert we ordered lemon crème brûlée along with a scoop each of coffee dark chocolate and peach with sumac ice cream. All were wonderful but the coffee ice cream had us floored. It was the best ice cream I’ve ever had and I really am not a fan of coffee flavored foods. The texture was beyond words- silky, creamy, mousse-like. The cocktails were unique with fun twists like smoked honey. A nice wine list is available as well. Service was attentive, well paced and friendly. It added to the experience and made everything super comfortable. The best word to describe our experience at Saint Florian is thoughtful. It was clear a lot of thought and love was put into every choice made from the design of the physical restaurant to the design of the menu. Short story: The Chef/owner has created a restaurant that hits all the marks for what I enjoy when dining out: good portions, well priced for what is received, welcoming/comfortable environment, vegetarian menu items, well trained staff, good cocktails and of course excellent food!

This was my second experience at Saint Florian, and both visits have been exceptional! On today’s visit, my boyfriend and I enjoyed a delicious lunch and fantastic cocktails which certainly helped us make the most of a raw and rainy Saturday afternoon in Hudson. I feasted on the fish and chips, and he enjoyed the chicken strip steak. Both meals were fantastic!! We will definitely be visiting again soon!

We were so impressed by Saint Florian - highly recommend! The meatloaf and steak with fries made the perfect meal on a cold, snowy night. The waiter and bartender were both so welcoming and friendly throughout our meal. Would definitely add to your list when in Hudson :)

(2025 Dec) Love this place. Service staff was v friendly. Had a few drinks and had the apple cider crème brûlée (was here with my son). Was good. Met some frequent customer one of whom was a volunteer firefighter who had work in the same spot (it was an old fire station). Showed us the tire marks. There you go - history and good company and friendly staff - all you need in a good bar. There was a 21st birthday party and the crowd swoon in at 9 - just as the lovely lady bartender promised. 😄

Absolutely outstanding. One of the best meals I’ve had in a while. The steak was cooked perfectly and everything from the salad to the sides were great. We celebrated my birthday and the team did so much to make sure everything was special. Will be returning!

Went there the other night. The space has been reworked better than I thought possible from the old barbecue place. Seats are spacious, lighting is warm, and everything seems really thought out. We started with the pickle plate and the shrimp. The pickle plate was fun, and the shrimp cocktail looked like it was plucked straight out of Rick’s Café Américain. Had a couple of glasses of natural wine. They definitely have a good buyer because, for a sub-hundred bottle list, they’ve got a bunch of low-allocation hitters. We had a bottle of Riesling with the fried chicken dinner. The chicken itself was super juicy and sweet. It wasn’t served with a dipping sauce, but I’m guessing that was intentional because the chicken really stands on its own. We had mashed potatoes and gravy and a warm, bacon-spiked coleslaw as well. Service was good—casual yet refined, with a vibe kind of like Bernie’s in Greenpoint. Definitely a top 10 upstate spot right out of the gate.

Friendly, warm and welcoming. Very laid back place. Clean. I would love to see the lighting dimmed a bit, but definitely a worthy stop.

I've had multiple great meals here. Very consistent great service. I loved it. They are open for lunch and dinner.

*review is for upstairs menu* My partner and I have been regularly visiting Hudson for seven (!) years now yet we never made a point of visiting this space when it was a barbeque spot. During our most recent visit, I took a walk up and down Warren to see if there were any new stores I wanted to investigate, and there was Saint Florian, cozy and inviting, emanating warmth. It was a particularly frigid weekend so the warmth part (plus the signage) really drew me in. Just a few hours later and there we were upstairs, eating some delicious food and not wanting to leave. Because the weather was miserable, a reservation opened up pretty quickly after I got on the Resy notify list (the restaurant also called me). The upstairs is only open on Fridays and Saturdays so we took advantage of it being a weekend, but the downstairs menu looks fantastic as well and has plenty of overlap with the upstairs menu, though as one would expect it's a bit more casual. While the downstairs was relatively empty, upstairs was almost completely full, pretty impressive for bad weather. Overall, the space itself is quite large and I'm excited to see it buzzing with more life in the warmer months, because it definitely has the potential (both in vibes and in food) to be one of the new go-to spots in Hudson. I think Saint Florian deserves closer to a 4.5 star rating, but the only letdown was the cocktails (the wine was fantastic). I got the Martini Classico w/ gin, which was decent but not even close to cold enough, while my partner got the Royal Punch (rum, citrus blend, maraschino, lime). He disliked it more than I did and he remarked that a squeeze from the lime wedge garnish improved the overall flavor profile, but it still was a lackluster drink. The wine was redeeming, though, as the red and orange we got were both excellent and described to us in impressive detail prior to us ordering them. Food-wise, Saint Florian definitely markets itself as a steakhouse but there are plenty of other exciting menu options in addition to steak. We ended up getting three appetizers and two smaller entrees and it was the perfect amount of food. Eats, below: Beet salad w/ winter citrus: A Definitely the winning appetizer of the night. It made great use of seasonal produce and was presented beautifully. All elements of flavor and texture you'd want are there - a light dusting of cheese, cashews for some crunch, microgreen garnish, thinly sliced beets and blood orange that were as flavorful as they were vibrant. NJ Big Eye Tuna Crudo w/ rhubarb, gooseberry, celery, chive: A- This was one of the nightly specials. A solid dish though the flavors were a bit muted for our liking. Still very good, with fresh fish with thinly sliced gooseberries for some sweetness (again, props for using winter produce and an underappreciated one at that). Could've been made even better with a little chip or crostini or something on the side to add some texture. Gem Lettuce Caesar w/ House Dressing, Boquerones, Cotija, Garlic Crumbs: A- Decent but not memorable. I enjoy whole anchovies in a Caesar but something about the way this was executed didn't quite do it for me. Still, if you like Caesar salads (and they are always a go-to at a steakhouse), this is still a good option. Steelhead trout with lentils, labneh: A The fish listed on the online menu is now a cod, so I'm glad I got this one instead - both because I prefer steelhead trout to cod and the accompanying elements in this one are more exciting to me than those being offered with the cod. Anyway, enough about that because this dish was stellar. I mean, look at the picture - how could this be bad? The fish was perfectly cooked, the lentils and labneh giving the dish some earthiness and heartiness while still somehow managing to be light. Really expertly done and I loved every bite. Petite Wagyu Filet w/ Brown Butter Bearnaise: A Though I am not a steak person, my partner very much is, so of course we had to try some steak. I had a bite of it at least, and it was very good (for steak, that is - even the best steak in the world doesn't really do it for me, but I can tell when it is well-done --- in quality, not temperature!!). The brown butter bearnaise was heavenly and my partner ended up wishing he had saved the leftover to put on various other things he ate during the remainder of the trip.

I visited Saint Florian in Hudson back in September, the food was absolutely delicious. When it came time to close out, our server accidentally brought us another table's check and said, "it's about the same prices as yours." We didn't think much of it, paid, and left a 20% tip since we'd enjoyed the meal. Later, after checking the menu, we realized we'd overpaid by about $20-$30. I understand things can get hectic when a restaurant is short-staffed, but a quick acknowledgment or even a small gesture like a drink or dessert would've gone a long way.

My wife and I stopped in here for lunch while we were visiting for a wedding. Everything we had from the coffees to the burger and fries were excellent. The vibe is super cute inside, and the service was great for how busy it was. Would come back here the next time we're in town

Best thing in the menu is the burger... but it isn't available from 5pm to 9pm! High end bar food. Informal but expensive.

I had the pleasure of dining at this gem of a restaurant a few months ago, and I'm still thinking about the wonderful and delightful time my wife and I had. It was so good we even brought out our extended family the next time we came. From the moment we walked in, the ambiance set the tone--warm lighting, tasteful decor, and a relaxed yet refined atmosphere made it feel both welcoming and special. The food and drink selection has both classic and innovative elements--surely enough to appease both the gastronome and burger-eater alike.

Popped in after skiing at Hunter. Saw they had a prime rib but only available Monday. Ended up with a Caesar salad and 16oz ribeye. Great attentive service, delicious food, and cool vibes. Wonderful new addition to Hudson. Rest of menu looks great so I will definitely come back.

I have to start off by saying that I am being generous with giving 2 stars as opposed to 1. The extra star is only due to the pleasant service from my two servers that were very attentive. My husband and I went to dinner here this past Saturday evening with great expectations of it being a prime steakhouse based on the prices alone, along with the reputation of Hudson NY and the clientele that are use to true NYC steakhouses. Boy were we sadly disappointed. I will keep this as brief as I can. The fried mushrooms and Confit Sunchokes were over fried almost burnt on the outside and firm, yet burning hot on the inside. Horrible to be honest. Both of them. Something I would expect at a fast food joint. My $50 14 oz NY strip was 3/4" thick at best, 1/2" of grizzle and fat boarding more that one full side of the cut and sitting in grease. It was served on a plate that I would find at a local diner with not so much as a sprinkle of garnish to make it the least bit more appealing. All I can say is that it was cooked to the temperature I ordered it at ... but I've had a better cut of meat found wrapped in plastic from price chopper. This steak was a joke. Again, horrible. Moving on to the wine that I so desperately needed to make this meal at all satisfying. As I sat and waited for it to arrive, I watched the bartender pour our two glasses of red wine one for myself and one for my husband. As I watched him finish pouring, I said to myself, surely he is reaching for another bottle because he ran out. No. He served us each a $15 glass of wine that was beyond pathetic. Not even a "2 finger" pour. It was barely 3+ ounces of wine in each glass. I actually made a comment to him asking him "is this really your pour that you serve a customer paying $15 a glass from the house "by the glass" selection. He said simply and confidently with a little arrogance, "yes, it's 5 ounces". I just walked away. In the end, our bill included 2 appetizers, 2 Tito's martinis, 2 entrees, and 2 glasses of wine. $250.00 later. NEVER AGIN!!! Beware. This place is a sad excuse for a steak house and will not be around very long if they don't turn things around FAST. Extremely disappointed and expecting so much more with Hudson's exceptional reputation.

Physical space is the best part of this restaurant. Very elegant with a funky vibe. Wish there were more good things to say. Menu is very limited and almost everything has some "unique" "unusual " flavoring that further limits choice. All except the steak, where you have to pay extra to get any sauce to flavor it. Ordered my filet med-well done, it came and was raw inside. They took it back to cook it more and returned it over done and completely tasteless. Plating was non existent- no garnish, and obviously, no sides. Cocktail tasted like fruit punch and had no detectable alcohol content ( and I'm a lightweight). Staff kept pushing drinks and clearly were just interested in running up the bill rather than contributing to an enjoyable evening. Paid a lot, ate almost nothing and would never go back.

Excellent service, and food. Strange choice of music, a bit too loud and funky to maintain a "normal" conversation. Yet worth repeating.

The bartender made delectable Manhattans! Cheers and bravo! The vibe in the place was great, the physical space is beautiful, and the staff were attentive and friendly. As a vegetarian, I can say this is the best steakhouse - I had more than one option! My partner raved about the prime rib.

Deplorable business model and I would never give them a dime of my money. We had a reservation made through their preferred app, with a credit card used to hold the reservation. Unfortunately, on the day of the reservation, half of the party (including 2 persons in their 80s) was diagnosed with a contagious virus. I called the restaurant in person, explained the situation, and was assured that it was not a problem to cancel with no charge. I have now come to find a $300 cancelation fee was put on my credit card. Odd that even after I cancelled, a friend called to get a table and was told none were available. It was a busy holiday weekend so I am sure the table filled.

I've eaten at St. Florian about ten times. Each time is great. The steaks are fantastic! Prime grade meats, perfectly aged and prepared. The burgers and apps are fantastic as are the fish dishes. Try the scallop and shrimp toast! Beyond the quality of the food, the rooms are very nicely done and the service is attentive without being overbearing. Give this place a try.
