That American place on Warren with the pint glass sidecars of martinis, the roller suitcase people at the bar, and the fried saltines that taste like Cheezits? The name is Saint Florian, a restaurant that opened in 2024 with a pubby, locals-only atmosphere downstairs and a glitzier weekend-only dining room above. Some of the details might escape you, but you will remember Saint Florian’s smacky little pickle plate and the booze as just-fine solutions to a late-night dining quandary in the Hudson Valley (they’re open until 11pm).
