Let's start nice and easy. This place is cute. This is a long review (i got a to long warning) because we tried nearly everything on the menu.
The vibe - Sit outside if the weather permits (it is well covered). The cute umbrellas remind me of visiting the streets in Cartegena. It's absolutely instagrammable. My party of five came for dinner. It's fun without being over the top. To help get you oriented by its location, Sebastion is located next to Sivas (under renovation) and across from Steak Market.
Parking - Atlanta is going to Atlanta. Valet parking is $20. You can pay cash or a card. You can text the valet, and they can bring your car out ahead of your departure in the event of rain or being busy to reduce your standing around time.
Service - amazing. Mateo checked on us A LOT, ordered food, and it was bought out 10-15mins later, and for tapas... that's a nice pace. Even the staffers' clearing tables were fumbling over themselves to offer assistance, recommendations, or water.
Food - in true tapas fashion, my party ordered all but 3 of the hot tapas. The Tenderloin Skewers are chefs kiss! Taste like beef, tender, and the aioli was a nice complement, I think my table order 3. The Croquettes were good, not life changing but good. Papas Bravas, Yes! Immediately, yes. There had to be 20 layers of ultra thin potatoes that made this potatoes bite very tender on the inside but crisp and flaky on the outside...cooking marvel. The shrimp ceviche was a fail, absolute basura. It's edible, but it's not true, ceviche. It's cooked shrimp with lime. We gave our feedback to Mateo, and he attributed the cooked ceviche being a chef alternative to people not understanding ceviche is supposed to be RAW. Interestingly, the tuna tartar was really good. The tuna was cut small enough to be tender and flavorful but not shredded to be mush. I don't like sourdough, but the grilled sourdough with the whipped ricotta was amazing. I needed another piece of bread because of the amount of ricotta on the plate, but I'll get to that when I talk about value/price. Grilled shrimp, they were well flavored and meaty but not memorable. Grilled artichoke I to be debated. The artichoke was a lot more briny than expected. I genuinely have to go buy an artichoke to determine if it's supposed to taste that way or was it over the top. It was tender and very pretty, but I don't know if I like it yet... let's see...what's left. Shisito peppers were good. Some of them were actually really spicy. I think the paprika aioli AND garlic aioli should be provided. Shisto peppers also come with the beef tenderloin. The sesame chicken was very good. It was served piping hot, and the breast/thigh morels or meat were a great addition. Pork belly.. a little crispy... a little chewy... a lot flavorful.
Libations- This place has an extensive gin collection... easily the largest gin collection in Atlanta. They have a dedicated gin cocktail drink menu. The drinks are very pretty. Some of the drinks are served unique over the top ways. We didn't order it, but next time, order the Salvador Dali...its served in a smoke box. I have no idea how it tastes but again instagrammable. The fragrance and love are served with a popcorn topper. The basque queen was very good. Sweet, fruity, subtly ginny. The mojitos were meh. I love the freshe fruit used but having had mojitos in cuba... my bar is high for such a simple bar staple. We ordered the sangria... a couple, to be exact. We thought it was all juice until the sangria started to creep up on us.
Price/value - this place is pricey for Atlanta. All tapas are between. $9 - $19. The price isn't bad but the quantity for the price is bad. Example... Stick out your pinky finger... that's the length and thickness of the beef tenderloin. It was 4 bites on a skewer...actually a bite per skewer. The only tapas that felt like a good value was the shisto peppers. You get an appetizer plate full of peppers. The Papas bravas were ok... one more potatoe cake would feel worth it. If you have a table of more than 2 people in your party, you're going to order multiple of everything so everyone can try everything. Drinks were pricey.
Overall , I'd go back.. I think there are other tapas places in the city that have a better value in price and quantity but a cute date night, dinner meetup with the gal pals, or just something light bite before a show/event. If my group didn't order multiples of everything, soror would leave hungry but honestly in true tapas form... it's a taste of menu not full meals. We skipped the paella BUT it looked small for the price.
Sebastion Pintxos has only been open about seven months. Give it a try. Let me know what you think.
