I was looking forward to this place, but it short on space and offerings.
Beverages:
Either water, mocktails, a few pricey standard cocktails, or their signature "seasonal herbs" cocktails that happen to have grapefruit in them (not good for those who take statins). I understand how delicious grapefruit is, but it limits those who take statins to the non-specialty cocktails they have. Also, no soft drinks or other non-alcoholic beverages. I understand the desire to keep things simple, but, as one of the non-Oklahomans in the room, even I thought no tea was weird. The G&T wasn't $14, in my opinion, but, oh well. New place and risky endeavors aren't always rewarding.
Food:
The focaccia bread itself was nice, with a good crumb, but the cod spread on the crust was a bit *too* salty, making me think they might not rinse/soak the cod long enough when they prep their condiment for the bread.
The raw oysters were quite tasty, but don't describe them as "big" if you've never had Gulf oysters or Kühlingsborn-based oysters that are rather large off the Baltic. These were $23 for six small oysters, though they were tasty.
Having seen the scallops on the table next, we decided to leave. They were miniscule and, considering Sedalia's rests in OKC, a landlocked city, not worth the money we might have spent on such a remainder of a menu. If you brand yourself a "tapas-style" place, look to Spain and San Sebastián's pintxos-style dining for inspiration regarding menu, drinks, and other offerings.
I feel this place is a couple of tweaks/re-toolings from being good, but it's not quite there yet, in my opinion. It's pretty crowded, too.
