Located at the top of the 4 Seasons, The Bygone offers a brunch, dinner, bar & lounge menu, as well as an extensive beverage list.
While we were in town for a work trip, we came here for an evening get-together. We ordered the following to share within our party:
+Snow Crab Claws - served with Old Bay butter, cocktail sauce, and dijonnaise; the snow crab claws were slightly fishy in taste
+Big Eye Tuna Tartare - with black garlic, jicama, avocado puree, kiwi, pickled red onions, and culantro; an interesting mix of the tuna mixed with avocado
+Oysters on the Half Shell - served with pink peppercorn mignonette, horseradish, green apple-celery foam, and basil oil; oysters were fresh and well-shucked
+the Caviar Service - with shallots, capers, eggs, chives, creme fraiche, brioche, and blinis; a nice experience!
+Seared Foie Gras - with persimmon, minus 8 vinaigrette, toasted brioche, duck fat powder, and frisee; this was more on the bland side
+Grilled Spanish Octopus - with sweet potatoes, lime, castelvetrano olives, pomegranate, and pine nuts; the octopus was slightly overcooked, which made it rubbery
+the Koji Aged Prime Filet Mignon - with epinards a la creme, potato croquette, trumpet mushrooms, and blue cheese-tallow butter; this was overcooked, which made it dry; we weren't impressed with this
+the Dover Sole - served with lemon-brown butter sauce, onion-garlic relish, and celery; more on the saltier side, so watch out if you're monitoring your salt intake!
The view is great, as they have floor-to-ceiling windows where you can soak in the B-more lights. Try to request a table by the window!
Service was more on the inattentive/non-existent range - it was hard to place orders, obtain refills, and get the check at the end of our dining experience.
