"When Rosewood Bermuda completed its $25 million renovation in 2018, much of its resources went into this handsome new gin bar off the lobby. Polished and refined in an upscale British Colonial sort of way, Conservatory Bar & Lounge oozes elegance. There’s the white marble bar with Plantation-style rattan stools; black-and-white porcelain tile floors; and cozy linen couches flanked by fireplaces and French doors that let in fresh air and views of turquoise Castle Harbour. There are nearly 40 gins behind the bar—sure, extra-dry Martinis are great, but don’t let that stop you from checking out the list of originals. The bar whips up several house cocktails that don’t use gin as a base, including the light and refreshing Grapefruit Spritz with Aperol, Prosecco, grapefruit juice, rose syrup, lemon juice, and soda water, but most folks typically stick to the gin since that’s what this place does best." - David LaHuta
