"I was struck by India Doris’s bright, singular menu at Markette in Chelsea: mostly British and European classics reimagined with Caribbean joie de vivre. The salt cod fritters—triple‑fried—are a must and manage to be light, airy, and pungent all at once; the peri‑peri half‑chicken is deboned, brined for days, juicy inside with a crispy skin and bright marinade; and shared plates like a bibb salad with an everything crumble, butter beans in tomatillo salsa verde topped with crispy soppressata, and braised oxtail over crispy cheddar polenta are all delightful.
