I have tried places where the sauce mixes fish and chicken or fish and pork. This one felt new. They build the dipping sauce on rich mentaiko and push that flavor as far as possible. They worked with a top noodle maker and built noodles that match the sauce. Their focus on taste and constant testing led to the first Mentai Nikomi Tsukemen in Hakata, Fukuoka.
