"After Hurricane Harvey’s rains subsided, I learned that Sylvia Casares went to the Eldridge Parkway location to survey the damage; the restaurant was mostly unscathed at first but waters continued to rise, forcing staff to wade in and move furniture and equipment to higher ground and dispose of food ruined by days without electricity. When water eventually poured into the building, sheetrock, insulation and wood had to be ripped out and replaced, and remediation — including multiple mold treatments — exceeded $62,000. Sylvia’s Enchilada Kitchen reopened just two weeks after Harvey made landfall, its dining room has been buzzing since, and many regulars returned — often emotionally — to eat fajitas and queso and tell the staff how relieved they were to see the restaurant made it through." - Amy McCarthy
