"Perched on the rooftop and debuting on November 25, Bar Cima is a mezcaleria with sweeping views of Manhattan and a jewel-toned room accented by antiqued mirrors, walnut doors, and stone tables. Led by beverage director Kyle Tran (formerly of San Francisco’s Roka Bar and The Aviary in Chicago), the program features classic and inventive cocktails, spirit pairings, mezcal flights, large-format drinks for six or more, and a deep selection of mezcal listed by region — an angle that reflects founder Tom Dillon’s decades working with Richard Sandoval restaurants and Rosa Mexicano. I expect it to be lively during its hours (Tuesday–Thursday 6 p.m. to midnight; Friday–Saturday 6 p.m. to 1 a.m.)." - Melissa McCart
