"Preparing to make its Katy debut, Stone Age Korean Grill is a project from Pascal Choi, the longtime co-executive chef at Soma Sushi and a native of Daegu, Korea, expected to open in the next month or so at 20940 Katy Freeway in the Gardens at Westgreen development. Unlike many of Houston’s Korean barbecue joints that use tabletop gas grills, Stone Age will focus on hot stone cooking—using a flat volcanic stone about 1 inch thick to cook everything from proteins to stews—which the restaurant says allows diners to experience tabletop cooking with less heat and smoke. Choi is finalizing the menu, but the website teases dishes like sous vide short ribs, sashimi tacos, bouncy udon with tempura, and foie gras toast; steaks will be prepared in the kitchen and finished on the table. The restaurant will also feature house-made desserts from Choi’s wife, Hui Lim, a pastry chef at the St. Regis Hotel.
