"I visited 503 Distilling's new cocktail lounge in Portland's Brooklyn neighborhood inside the Iron Fireman Collective building this winter; best known for its canned cocktails like the Wicked Mule and Blood Orange Greyhound, the distillery — founded in 2017 in Oregon City and producing gin, whiskey, rum, and vodka — has returned to basics with a bar serving made-to-order and draft cocktails (including draft versions of its popular canned drinks) alongside spiced lamb sloppy joes. After gaining national retail distribution and moving toward Portland in 2021, the team secured a full on-premise license so they can serve full-sized cocktails, tapped bartender Danni Mailhiot (whose experience includes tenure at Nostrana and Headwaters), and offer cocktails made with their spirits such as the Apple Jacks (Gambler Whiskey, apple juice, lemon, and bitters) and the Brooklyn Yard (vodka, rhubarb, and whiskey); they use their draft cocktail line as R&D so if a drink gets hype they can dial it in to make it canned, and many drinks are available to-go. The space also functions as a retail shop selling the canned cocktails and bottled spirits to go, features custom-built tables with seating for around 35 (capacity up to 50), and is open from 3 to 9 p.m., Thursdays through Saturdays and 1 to 7 p.m." - Alex Frane
