"In the former Little Donkey space at the Germantown Market, I discovered a fowl-centric fast-casual concept from Fresh Hospitality that officially opens Monday, May 13: Waldo’s Chicken & Beer. The menu is straightforward and made from scratch daily — choose pickle-brined Southern fried or fire-roasted chicken served on the bone, on a bun, in a bowl, or in a basket, with starters like cheddar biscuits, pimento cheese, or fried pickles and scratch sides ranging from macaroni and cheese to pinto beans and cucumber salad. A rainbow of ten sauces accompanies sandwiches, tenders, wings, or salads, and the spot aims to be both an affordable grab-and-go lunch option and a place to settle in and watch the game. There’s a full bar with an extensive local and regional craft beer selection, limited wines, and cocktails starting at $8, plus a large covered patio with seating for about 50.
