"A new members’ club project opening on the former Brasserie Chavot site on Conduit Street in Mayfair aims to be a catalytic platform that brings together social entrepreneurs, investors, creatives, business leaders, policy-makers and civil society to tackle pressing social and environmental challenges. Its fourth-floor restaurant will be led by Merlin Labron-Johnson, a chef known for imaginative, modern cooking, a commitment to sourcing and work with initiatives such as Massimo Bottura’s Refettorio Felix and the Chef’s Manifesto; Bottura is slated for a four-day guest appearance ahead of the mid-September opening. Seating will be intentionally small — just 36 covers — allowing the kitchen to work exclusively with small, independent and sustainable producers, taking everything they grow or produce and letting those producers largely dictate the menu; the food is expected to be more vegetable-centric and deliberately limited. Early supplier partners named include fruit-and-veg specialists Natoora, the OrganicLea Community Farm co‑op, Cornish seafood suppliers Kernow Sashmi and Lake District Farmers for meat, and the club’s founders stress that the project’s manifesto and membership ethos are designed to support this sustainable, community-focused approach while encouraging guest appearances from a couple of high-profile chefs each year." - Adam Coghlan
